There are actually two process is used to decaffeinated coffee, the Swiss Water Process and the Chemical Solvent Method. The former is obviously free from chemicals, but it can be more expensive, and is used for gourmet and organic blends. The latter uses chemicals to remove the caffeine and often uses cheaper beans like Robusta.
